Ingredients (for 5-6 fritters):
1 medium/ large courgette
1 medium/ large carrot
2 eggs, lightly beaten
1/2 cup of flour
1/4 cup of grated parmesan cheese
1/2 teaspoon baking powder
Handful fresh parsley, chopped

Directions:
1. Grate the courgette and carrot. With a dry cloth or kitchen towel, wrap up the grated courgette and carrot, and twist tightly into a ball in order to draw out any excess moisture. Once this is done, sprinkle coarse salt and set aside.
3. In a separate bowl beat two eggs, sieve 1/2 cup of flour and 1/2 teaspoon of baking powder; mix the contents with a whisk so as to avoid any lumps. Add salt and pepper to taste.
4. Finally, add the grated vegetables and 1/2 cup of grated parmesan cheese and chopped fresh parsley. Combine the ingredients using your hands.
5. Drizzle your choice of oil into a frying pan, and cook the fritters over medium heat until golden (alternatively, you can also bake these in the oven)

I hope you guys enjoyed this easy peasy healthy lunch or dinner...or possibly even snack if you're having one of those greedy days haha (i have those often..)

Let me know if you give this recipe a try, or have tried one that's similar. Enjoy!

Stay Chic!

Much Love, Ana Sofia
